Thai Braised Beef Soup Recipe (Neua Tun)

Serve with steamed jasmine rice (recipe on our site), boiled rice noodles or crusty french bread and a green salad.

Ingredients

    • 500 grams beef shank (about 1 lb.)
    • 1 celery, cut into lengths about 1" long
    • 2 lettuce plants, 300 grams bean sprouts
    • 1 tbsp coarsely chopped fresh coriander, about 1/2" length
    • 1 piece galangal, about 1/2" length
    • 1 crushed coriander root (or substitute with the top leafy part)
    • 1 stick cinnamon, about 1" long
    • 1 tbsp fried garlic
    • 1 bay leaf
    • 1/2 tsp white pepper (Rocket brand recommended)
    • 1/2 tsp sea salt
    • 1/2 tsp ground black pepper
    • 2 tbsp light soy sauce (Thin soy sauce, Dragonfly or Healthy Boy brand)
    • 1 tbsp dark soy sauce (Black thick soy sauce, Healthy Boy brand)
    • 10 cups water

Preparation

Wash the beef, cut into 1" cubes. Put all the spices and seasonings into a pot. Follow with beef and water. Bring to a boil over medium heat, then reduce the heat. Cover and simmer for 50 minutes until the beef is tender. Blanch the bean sprouts and arrange in a serving dish together with sliced fresh lettuce.

Spoon the braised beef and soup over. Sprinkle chopped coriander, celery, fried garlic and pepper on top. Serve hot with steamed rice or cooked noodles.

Chicken Curry with Tamarind (Sour Chicken Curry) : Top Thai food menu

The richness of this water-based chicken curry depends upon the inclusion of the bones. Practical for Westerners, the preparation time takes less than 30 minutes. Use a sharp heavy cleaver to cut though the chicken bones with a quick blow - it is easier than it sounds! But if your knife is dull, substitute boneless chicken breast.

 

Ingredients

    • 1 1/2 lb chicken hind quaters
    • 3 level tbsp sour red curry paste
    • 2 tbsp water
    • 1 cup water
    • 1 tsp sea salt
    • 2 level tblsp tamarind paste or fresh lime juice
    • 2-3 tbsp fish sauce
    • 4 fresh Thai chili peppers (prik kee noo) or jalepeno, if desired
       

Preparation

Serperate the leg from the upper thigh cutting with a sharp cleaver (or have the butcher do it for you); cut the drumsticks in half crosswise;cut the upper thigh into approximately 1 1/2 by 1 1/2 inch pieces, cutting through the bone with a sharp blow of the knife. Use the base of the palm of your hand to pound the back of the cleaver if needed to cut completely through.

Mix the curry paste with the 2 tbsp of water in a small bowl. Add paste to 1 cup of water in a medium size saucepan. Add the cut-up chicken pieces. Add 1 tsp sea salt.

Add the tamarind, breaking into small pieces with your fingers. There will be some seeds in the curry this way, if it is the paste with the seeds. If you prefer, mix the tamarind in 2 tbsp of warm water, palpitating it with your fingers to extract the juice. Discard the seeds. Add the juice to the saucepan.

Bring chicken to a boil over high heat. Boil until the chicken is cooked through, approximately 8-10 minutes.

If desired, add the jalepenos cut in half or in thin long slices, with or without the seeds. If you like it spicy leave the seeds intact.

Add 2 Tblsp. of fish sauce. Cook 1 minute longer. Turn off the heat. Serve in a medium sized bowl with a serving spoon. Each diner spoons just what he/she needs over an individual portion of jasmine rice.

Notes:
When making curry do not add too much water, adding just enough to cover the ingredients. This will intensify the flavor.

Use fish sauce (nam plah) like salt, adding at the end of cooking, to adjust seasoning to taste.

To intensify the heat, add fresh chile peppers at the end of cooking. Slightly crush tiny birds eye chilies, with the side of a cleaver. Jalepenos are more readily available. Slice into quaters. Remove the seeds if a milder flavor is desired. Cook just slightly for a hotter flavor. Also note that, red chilies are hotter than green of the same type. But chiles can vary in degree of hotness, depending on the area where they were grown and their age.

Serve the curry with Thai jasmine rice. Serves 3 to 4

Thai Hot Spicy : Nam Prik Narok

Thai Food Recipes : Nam Prik Narok (Dipping Sauce from Hell) น้ำพริกนรก Recipe from: Colonel Ian F. Khuntilanont-Philpott

This recipe is normally made from sun dried chilis. Dried red chilis are fairly readily available in America and Europe, but dried green chilis are unusual. You could dry, or smoke fresh chilis, either in a hot oven or in a sealed container on a barbeque, or with a home desiccator, but if all else fails, chop fresh chilis, and spread them on a cookie tray and put them under the broiler until fairly dry. This saucekeeps well, and is popular as "traveler's fare" in Thailand, being usedas an accompaniment to various dried meats and sliced vegetables.

Nam Prik Ingredient

  • 2 to 3 pound of catfish pieces
  • 1 pound of dried prik ki nu haeng (dried greed birdseye chilis)
  • ½ cup of garlic, chopped (including the skins)
  • ½ cup of shallots, chopped (including the skins)
  • 2 tablespoons of kapi (fermented shrimp paste)
  • ¼ cup of fish sauce
  • 3 tablespoons of sugar (preferably palm sugar). The shallotsand garlic are broiled/grilled until the skins blacken, and then peeled and chopped.

The dried chilis are also broiled until they just begin to blacken.This is very critical -- overdo it and the vapor given off is highly irritating to the nose and eyes! (If nervous, follow the suggestion above about cooking on a cookie sheet, but do it outdoors.)

Deep fry the fish until crispy, then tease off the flesh, discarding the bones. You need 2 pounds of shredded cooked fish.

Combine all the ingredients in a blender or food processor.
