Yum Talay - Thai Seafood Salad Recipes

Yum Talay" - Seafood Salad : Thai salads don't have a lot of vegetables!

This particular dish is easy to prepare and can be served as either an appetizer, or as part of the main course. It is normally prepared spicy, however you may feel the need to decrease the amount of chili that you use during preparation.

Ingredients:

  • 1/2 pound of shrimp
  • 4 imitation crab meat sticks, sliced into 1/4" chunks
  • 2 oz. squid, cut into bite sized pieces
  • 2 tablespoons of lime juice
  • 1 tablespoon dry red chili, ground
  • 2 tablespoons fish sauce
  • 1 teaspoon palm sugar (or substitute regular sugar)
  • 1 teaspoon shrimp paste (Ka-pi)
  • 1 teaspoon very finely sliced jalapenos
  • 1 shallot, sliced thin
  • 2 lime leaves, sliced thin
  • 2 tablespoons onion, chopped

Directions:

  1. Add the fish sauce, lime juice, red chili, palm sugar, and shrimp paste into a small saucepan, bring to a simmer. Add in the seafood and jalapenos. Cook for about 2 minutes, or until the seafood is cooked through. Remove from the heat, and add in the lime leaves, shallots, and onions.
  2. Serve at room temperature.

Thai Dessert Recipes 

Thai Mango Sticky Sweet Rice Dessert (Khao Niaow Ma Muang)is an absolute must try! This recipe is foolproof and even budding chefs with two left hands come off smelling mango sweet. This easy Thai dessert starts with Thai sweet rice (also called sticky rice) which is surrounded by a "bath" of coconut milk, then topped with slices of fresh (or frozen) mango. If you like mangos, you're going to love this very simple but tropical dessert. Mmmmm!

INGREDIENTS:

    • Serves 2-4
    • 1 cup Thai Sweet Rice (also called "sticky rice", available at Asian markets and grocery stores)
    • 1 3/4 cups water
    • 1 ripe mango, cut into bite-size pieces (look for mangos that are fragrant and easily bruised), or 1 pkg frozen mango
    • 1/4 cup + 1 Tbsp. brown sugar (for a natural sweetener substitute maple syrup)
    • 1 can good-quality coconut milk
    • 1/4 tsp. + pinch of salt
    • 2 tsp. coconut flavoring
    • 1 tsp. vanilla
    • 2 tsp. cornstarch or arrowroot powder dissolved in 2 Tbsp. water

 

:PREPARATION: Thai Mango Sticky Sweet Rice Dessert

    • Soak the sweet rice in 1 cup water for 20 minutes, or up to 1 hour.
    • When done soaking, add 3/4 cup (more) water plus 1/4 can coconut milk, 1/4 tsp. salt, 1 tsp. coconut flavoring, and 1 Tbsp. brown sugar. Stir this into the rice, lifting any rice grains that have stuck to the bottom of the pot.
    • Gradually bring to a gentle boil, then partially cover with a lid (leaving some room for steam to escape). Turn the heat down to medium-low (#2.5 to 3 on the dial).
    • Allow to cook for 10-20 minutes, or until the water has been absorbed by the rice. Remove the pot from the heat, place the lid on tight, and leave to "steam" cook for 5-10 minutes. The heat within the rice pot will finish cooking the rice.
    • Make sauce and serve the dessert right away, or store the rice (covered) in the refrigerator until you're ready to use it.
    • To make the sauce, warm the rest of the can of coconut milk together with 1/4 cup sugar, a pinch of salt, 1 tsp. coconut flavoring and 1 tsp. vanilla flavoring over medium heat (5 minutes).
    • Add cornstarch or arrowroot powder (dissolved in the water) to the sauce and stir to thicken it slightly. As it thickens, turn down heat to low. When thickened, remove from heat (this should only take a couple of minutes).
    • Tip: Try not to over-cook the sauce, or you will lose that wonderful coconut flavor.
    • Before serving, taste-test the sauce for sweetness, adding more sugar if desired. If too sweet for your taste, add a little more coconut milk.

Thai Red Bean Dessert : Red Beans are the healthiest dried beans available, rich in antioxidants and loaded with fiber. They also have a naturally sweet flavor which makes them excellent for desserts. Enjoy them in this one of many Thai coconut-based dessert recipes. An easy dessert to make in your slow cooker, either overnight or during the day.

 INGREDIENTS:

    • Serves 4-6
    • ½ cup red adzuki beans
    • 1 ½ cups water
    • 2 cans coconut milk
    • ½ cup Asian-style "pearl" tapioca (very inexpensive at Asian food stores), or regular minute tapioca
    • 2 tsp. vanilla flavoring
    • ½ cup sugar (or more depending on desired sweetness)
    • pinch of salt
    • optional: a handful of dried seaweed to eliminate "gas" from the beans (available at Asian grocers)
    • optional: 2 Tbsp. dry shredded baking-type coconut, as is, or toasted
    • optional: a few red jelly beans to sprinkle on top

PREPARATION:

    • Place beans, water, salt, and seaweed (if using) in a slow cooker on “high”. Cook for at least 2 hours, or until beans are soft. (If more convenient, leave the beans to cook on “low” overnight or all day).
    • Alternatively, you can soak the beans overnight, then cook in a pot on the stove.
    • Once beans are soft and fully cooked, using a potato masher, mash beans into small pieces.
    • Tip: If your cooker is made of glass, this can be done directly in the slow cooker, without removing the beans. For slow cookers coated with a non-stick surface, remove beans and mash in a separate bowl, then return to slow cooker to avoid damaging your appliance.
    • Add 1 can of the  coconut milk, sugar, tapioca, and vanilla. Stir well and leave to cook on “high” for another 30-60 minutes. Check occasionally, adding 1 cup of water or more if the pudding becomes too thick.
    • Do a taste test for sweetness and to make sure your tapioca is cooked (it should no longer taste hard or granular. If using Asian tapioca, the "pearls" will turn transparent). Regular "minute" tapioca may take slightly longer.
    • Serve warm in bowls or dessert cups. Top the pudding with some coconut cream (the thick creamy milk at the top of the can) to create 2 distinct layers. If desired, add a sprinkling of shredded coconut (dry baking-style coconut) and a few red jelly beans. Enjoy!

Dried Beef With Thai Sticky Rice Recipe : Ingredients

  • 3/4 lb Top sirloin beefcut into thin strips
  • 1 Teaspoon minced garlic
  • 1.5 Tablespoons Thai soy sauce
  • 1.5 Teaspoon sugar
  • 1 Teaspoon ground black pepper
  • 1 Cup vegetable oil
  • 1 tablespoon of whitesesame seed (optional)
  • Thai sticky rice: 1 Cup Thai sticky rice (also known as 'sweet rice') soak in3 cups water about 2 hours

 

Directions : Dried Beef

  • Marinate beef with minced garlic,soy sauce, sugar and black pepper for 20 minutes.
  • In preheated oven at 170 degrees, dry the marinated beef for 2 hours (turning the beef a couple times to make sure it dry evenly on both sides) Even better if dry out in the outside sun.
  • Heat vegetable oil over medium-high heat, deep fry the dried beef for 3-5 minutes.
  • Pat dry with paper towel and serve with sticky rice and Thai chill sauce
  • FOR RICE: Drained water, bring to steam, uncovered. Cook rice for 7 mintures and thoughly turning the rice up side down for it to cook from steam, keep turning til all side of rice are cook, when cooked, stir rice to break out the steam and then place rice in a sticky rice container or steam rice cooker.
  • Wooden steamer can be find in any Thai Market. If not, it can be steam in a rice cooker.
  • This beef can be refrigerator for next use.

Thai Beef for Serves 4.

Ingredients:

    • 500g lean beef strips
    • 1 tbsp thai red curry paste
    • 1 tbsp fish sauce
    • 300ml canned coconut milk
    • 2 tbsp vegetable oil
    • 1 tbsp Brown sugar
    • 1 tsp crushed garlic
    • 1/2 red capsicum (large mild pepper)
    • 80g button mushrooms
    • 80g spinach
    • 4 tbsp chopped basil

 

Directions:

  1. Mix the beef strips with oil and garlic. Heat wok on high. Stir-fry the beef strips in batches 1 minute, removing each batch when cooked.
  2. Before returning beef strips to wok, add capsicum (sliced) and sliced mushrooms with a sprinkling of water. Stir for 2 minutes.
  3. Return beef strips. Add curry paste, fish sauce, coconut milk, brown sugar, chopped spinach and chopped basil. Toss to heat through. Then serve with boiled rice and fresh basil leaves.

Thai Beef Salad 

Ingredients

    • 2 green onions, chopped
    • 1 lemon grass, cut into 1 inch pieces
    • 1 cup chopped fresh cilantro
    • 1 cup chopped fresh mint leaves
    • 1 cup lime juice
    • 1/3 cup fish sauce
    • 1 tablespoon sweet chili sauce
    • 1/2 cup white sugar
    • 1 1/2 pounds (1 inch thick) steak fillet
    • 1 head leaf lettuce - rinsed, dried and torn into bite-size pieces
    • 1/2 English cucumber, diced
    • 1 pint cherry tomatoes

 

Directions

  1. In a large bowl, stir together the green onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce and sugar until well combined and the sugar is dissolved. Adjust the flavor, if desired, by adding more sugar and/or fish sauce. Set aside.
  2. Cook the steak over high heat on a preheated grill for approximately 4-6 minutes on each side, until it is cooked medium. Do not overcook the meat! Remove from heat and slice into thin strips. Add the meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
  3. Tear the lettuce into bite size pieces and place in a salad bowl. Arrange the cucumber on top of the lettuce, and then pour the meat and sauce over. Top with the cherry tomatoes and garnish with fresh cilantro leaves.

    • 1/2 cup reduced sodium soy sauce
    • 1/2 cup rice wine vinegar
    • 3 tablespoons orange juice
    • 3 tablespoons canola oil
    • 1 tablespoon sesame oil
    • 2 garlic cloves, minced
    • 2 teaspoons ground ginger
    • 1 teaspoon peanut butter
    • 3/4 teaspoon salt
    • 1/2 teaspoon cayenne pepper
    • 12 ounces spaghetti, uncooked
    • 1 cup broccoli florets
    • 1 cup snow peas
    • 1 cup red peppers, julienned
    • 1 cup zucchini, julienned
    • 1/2 cup celery, thinly sliced
    • 1 lb boneless beef top sirloin steaks, cooked and cut into thin strips 2 tablespoons sesame seeds (optional)

Directions

    • For dressing, combine the first 10 ingredients in a blender; cover and process until blended.
    • Cook spaghetti; drain and place in a large bowl.
    • Add the broccoli, peas, red pepper, zucchini, celery and cooked beef. Add dressing and toss to coat. Cover and refrigerate at least 2 hours.
    • Just before serving, sprinkle with sesame seeds, if desired.

  • 6 green cardamom pods, seeds only
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 4 teaspoons paprika
  • 1 orange, zest of, mandarin finely chopped
  • 4-5 small red chilies, seeded and finely chopped
  • 5 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 stalk lemon grass, 4 in long, shredded
  • 3 garlic cloves, crushed
  • 3/4 inch galangal or fresh ginger, peeled and finely chopped
  • 4 red shallots, finely chopped or 1 medium red onion, finely chopped
  • 1 piece shrimp paste, 3/4 in square
  • 2 ounces fresh cilantro, chopped
  • 2 limes, juice
  • 1/2 lime, juice
  • 2 tablespoons vegetable oil
  • 2 tablespoons chunky peanut butter
  • 1 lime, sliced to garnish
  • 1 large red chili, sliced to garnish
  • 1 bunch fresh cilantro, shredded, to garnish

 

  1. Place the meat in the freezer for 30-40 minutes until firm. Slice the meat thinly, cut into strips, and chop finely.
  2. Strain the coconut milk into a bowl. Place the thin part and half of the thick part of the milk in a large saucepan.
  3. Add the beef, and beef stock, bring to a boil, cover, and simmer for 50 minutes.
  4. To make the curry paste, dry fry the coriander, cumin seeds, and cardamom in a wok for 1-2 minutes. Combine with the nutmeg, clove, cinnamon, paprika, and the zest of the mandarin orange. Pound the chilies with the sugar and salt. Add the chili paste, lemon grass, garlic, galangal or ginger, shallots or onion, and shrimp paste. Lastly add the cilantro, juice of 1/2 lime, and oil.
  5. Strain the beef, reserving the cooking liquid and place a cupful of the cooking liquid in a wok. Stir in 2-3 tbsp of the curry pastry according to taste.
  6. Boil rapidly until the liquid has reduced completely. Add the remainder of the coconut milk, the peanut butter, and the beef. Simmer, uncovered, for 15-20 minutes. Stir in the remaining lime juice.
  7. Serve decorated with the lime, chili and cilantro
